For the Homemade Taco Seasoning (optional):

Instructions:

Mix the Ingredients: Start by combining beans, onion, chili peppers, corn, tomato sauce, diced tomatoes, cumin, chili powder, and taco seasoning (either from the packet or your homemade mix) in your slow cooker. Make sure everything is mixed well for an even distribution of flavors.

Add the Chicken: Nestle the chicken breasts into the mixture, ensuring they’re completely covered. This will allow them to soak up all those amazing flavors as they cook.

Set & Forget: Cook your chili on LOW for 8 to 10 hours, or if you’re short on time, set it to HIGH for 4 to 6 hours. The beauty of a crock pot is that it does all the work for you!

Shred the Chicken: About half an hour before you’re ready to serve, remove the chicken breasts from the slow cooker and shred them using two forks. Once shredded, return the chicken to the pot and give it a good stir to mix in.

Garnish & Serve: Top your chicken chili with the freshly chopped cilantro. If you’re feeling adventurous, add your favorite toppings such as sour cream, shredded cheese, or avocado slices.

TIP: If you opted for the homemade taco seasoning, this is a great mix to keep on hand for future recipes. Make it in bulk and store in an airtight container for up to 6 months.

There you have it, a comforting bowl of Crock Pot Chicken Chili that’s bound to warm your heart and belly. Serve with a side of cornbread or tortilla chips for an extra treat.

Enjoy!
